Start with what is good

The Greek table does not need to perform. Bread can stay bread. Tomatoes only need salt. Feta welcomes oregano. Olive oil ties the separate ingredients together without hiding them.

Let the olive oil remain visible

Pour it into a small bowl for bread, across the feta and over the tomatoes. When the food is this simple, the oil becomes part of the aroma, texture and finished flavour.

Gather rather than cook

This is an idea for eating, not a formal recipe. Use what is fresh, bring everything to the centre and allow the table to develop slowly.
