Why olive oil? / A practical guide
Why does good olive oil taste peppery?
A clean peppery or prickling sensation, often felt toward the back of the throat, is called pungency and can be a positive characteristic of extra virgin olive oil.

Official tasting vocabulary recognises fruitiness, bitterness and pungency as positive attributes. Fruitiness describes aromas associated with sound olive fruit; bitterness is noticed on the tongue; pungency is the biting or peppery tactile sensation.
The intensity can range from delicate to robust. A forceful throat catch is not required for every good oil, and a mild oil is not automatically inferior.
Balance matters. The peppery feeling should appear within a clean, fresh flavour profile rather than alongside stale, musty or rancid notes.
Pungency is therefore not automatically a defect—and it is not, by itself, proof that one bottle is better than every other bottle.
