Why olive oil? / A practical guide

Why enjoy extra virgin olive oil uncooked?

Using EVOO uncooked or as a finishing oil keeps its aroma, fruitiness, bitterness and pepperiness especially easy to notice.

Extra virgin olive oil poured uncooked over feta and oregano

Dip bread, dress tomatoes or feta, pour it over vegetables and salads, or finish a cooked dish at the table.

Uncooked use is central to Ingredient because it keeps the olive oil visible in the food. It is about flavour and simplicity—not a claim that cooked olive oil is unhealthy.

Many tables use EVOO during cooking and add another small pour at the end when fresh aroma matters.
