Why olive oil? / A practical guide
Can you cook with extra virgin olive oil?
Yes. Extra virgin olive oil can be used for sautéing, roasting, baking and other everyday cooking, as well as dressings and finishing.

Use heat appropriate to the food and avoid allowing any cooking fat to smoke heavily for long periods. This is ordinary kitchen practice rather than a warning unique to olive oil.
Cooking changes flavour. Some of the most delicate fresh aromas become less noticeable with prolonged heat, which is why an aromatic oil can feel especially expressive when used at the table.
Ingredient emphasises bread dipping, salads, tomatoes, feta and finishing because these uses let you taste the oil clearly—not because EVOO becomes unhealthy when warmed.
A practical approach is to cook with olive oil where it suits the dish and keep a little for the final pour when you want its aroma to remain prominent.
