Flavour first
Tomatoes. Olive Oil. Sea Salt.
When tomatoes are ripe, the work is already done. Cut them, salt them and finish with olive oil.

A simple way to serve it
01
Cut ripe tomatoes over a plate
02
Add sea salt and wait a minute
03
Pour EVOO over the fruit and its juices
04
Use bread for what remains
Olive oil as a finishing ingredient
The oil mixes with tomato juice and salt to create something larger than a dressing. It carries aroma, changes the texture and becomes part of every bite.
Let the tomatoes lead
Out-of-season tomatoes may want herbs, feta or vinegar. Truly ripe tomatoes usually need much less.
Use the plate
The liquid at the bottom is not waste. It may be the best part of the dish once bread arrives.
Cut. Salt. Pour.
