Protect olive oil from light, heat and air—and use it while it still tastes fresh.
Keep the bottle tightly closed in a cool, dark cupboard, away from the hob and sunny windows.
Olive oil does not improve after bottling. Buy a quantity that fits how quickly your table will use it.
